Italian with NO tomatoes

My oldest daughter is allergic to any natural/organic/processed tomoatoes. Any one have any suggestions as she LOVES italian food.

    Alfredo sauce has no tomatoes, and there are healthier versions in stores and recipe sights. Also, white lasagne made with chicken and bechamel.

    You can also try grilled vegetables and pasta wih balsamic viniger. Juices from the vegetables and the viniger tastes good! If you dont want to grill you can saute the vegetables with olive oil and balsamic in a pan.

    You can always do a Pesto Sauce too.

    I love pesto ... take a package of basil, remove the buds and stems, chop finely or grind in blender with olive oil, salt, garlic. Some people add nuts, some people add cheese, some people add a little milk or ranch dressing. I have also used arugula or spinach when i didn't have enough basil. Freezes well too.

    Chicken Marsala over a pesto pasta has no tomatoes.

    Alfredo sauce.

    Baked lemon and garlic chicken or shrimp.

    Mussels with pasta tossed in garlic and olive oil and hint of lemon.

    Bruschetta bread without the tomato.

    Arancini (Rice balls). Make a yellow rice slightly mushy so it's easy to form. Brown lean ground beef and/or veal with garlic, oregano, and a bit of parsley flakes..add peas if you desire. Take a palm size serving of rice and flatten it, put cooked meat mixture in the center, and a chunk of Gorgonzola cheese and form a ball with the rice making sure the mixture inside is completely covered. Put the rice ball in an egg wash, coat with bread crumb and deep fry (or bake). Delish!

    White lasagna with alfredo sauce.

    White pizza with ricotta

    Pesto and tapenade make great sauces when added to olive oil or cream...allergies are an adventure...I don't know how many times people have said "I never would have thought of that combination" I just say "well the alternative is a quick ride to the morgue".

    Pesto and alfredos are a good standby. One of my favorites is a white wine based linguini and seafood. Simmer a bottle of white wine (the cheapest you can find is perfect), a can of clams, some shrimp and some crab until the alcohol is boiled off. Add some parsley and toss with cooked linguini.

    You could used a white sauce such as alfredo, pesto would be another option, or you could use olive oil with balsamic vinegars. Those come in a variety of flavors. Grilled veggies would be another yummy option too! There are lots of options for eating italian without tomatoes. Best of luck!

    You can make pepper paste (red bell pepper, of course), similar to tomato paste/ketchup, from roasted pepper. It's great as a replacement in some recipies.

    Is it just tomatoes or is it all nightshades (peppers, eggplant, tomato)?
