Delicious Black Beans!

2 cans of reduced sodium black beans.
1 packet of taco seasoning
1 cup of water
1/8-1/4 teaspoon of red chili flakes.
1 bay leaf

Rinse and drain black beans. Combine all the ingredients and simmer until no longer liquidy! So good and a little spicy. Serve with grilled chicken, whole wheat torillas and brown rice.

    that sounds simple and delicious. Healthy too. I make my own taco seasoning because I need to keep my sodium down. :heart:

    I made myself a black bean dish for lunch today!

    1/2 cup black beans
    1/2 of a huge sweet potoato diced
    1/4 cup salsa
    seasoned w/ cinnamon, cayanne , garlic powder and pepper

    roasted the sweet poatoes, i had already prepped the beans prior (from scratch dry beans- cheap and low sodium)
    combined with beans and salsa

    VERY Filling, quick and easy low cal, could use a little more protein but very tasty!

    Top that deliciousness with an egg (runny yolk if you're into that sort of thing) and you've got more protein!

    I use the jar if i don't have fresh on hand, but after making fresh the jar stuff doesnt taste great...
    I use the pampered chef salsa recipe...
    1 small onion
    1 jalapeño pepper, stemmed ( I use 2)
    1/2 cup (125 mL) loosely packed fresh cilantro
    2 tbsp (30 mL) fresh lime juice (1 lime)
    2 garlic cloves, peeled
    1/2 tsp (2 mL) salt
    2 cups (500 mL) grape tomatoes, divided

    in a food processor put onion, garlic and jalepeno, process then add the rest of the ingredients.

    Using reduced sodium black beans is great! But check sodium stats on taco seasoning ouch!! :grumble:

    mmmmm drooling. I made guacamole today with half an avocado garlic, onion lime juice cayenne, and a half cup of black beans smooshed into it. I seved it on jicama rounds......delicious.

    How do you make your taco seasoning?

    Homemade taco seasoning:
    6 Tsp. Chili Powder
    5 Tsp. Paprika
    4 1/2 Tsp. Cumin
    3 Tsp. Onion Powder
    2 1/2 Ts Garlic Powder
    1/8 Tsp. Cayenne Pepper

    Measure all ingredients into a ziploc bag, seal and shake well Store in cool, dry place for up to 6 months. Seven teaspoons (a little over 2 Tbsp) of mix equal a 1.25 oz. pkg. of purchased taco seasoning mix.
