Vegetarian Recipes?

Do any Vegetarians out there have any really good, low fat recipes, that actually fill you up? This goes for any meal during the day.

    2 of my favorites are:

    A salad bowl with rice, black beans, lettuce, tomatoe, avocado, shredded cheese and corn. Yummmm. And sweet potatoe & black bean enchiladas. I bake the sweet potato until its soft then mash it up with a can of black beans mixed in and a little taco seasoning. I fill tortilla shells with the mixture and roll them up, seamside down in a baking dish. Top wish some enchilada sauce and mexican cheese. Bake at 375 for about 25 min. My husband (huge meat eater) loves both of these dishes a lot.

    Homemade black bean burgers topped with avocado slices, tomatoe, pepperjack cheese and grilled pineapple are also good. I serve them on hawaiian rolls. Do you have pinterest? I have found lots of options on there.

    Yum both of those sound so good!

    I tend to like my foods more boldly flavored, so I tend to adapt recipes like this to my liking -- but I've used this site to make up things I like.

    Great ideas! I've made black bean and sweet potato burritos. Not sure why I didn't think about taking them one step further for enchiladas :tongue:

    Do you make your sauce homemade? I'd prefer to not use a canned sauce.

    Here are some of my thoughts:
    -There's a pretty big post about sweet potatoes and what to do with them. I'd look through that for some ideas if you like sweet potatoes.
    -Black bean burgers
    -Portabella caps grilled and put on bun with all the fixings
    -No-meat meatballs and spaghetti (could also swap out the pasta noodles for spaghetti squash if you want less starcy option)
    -Pancakes! Loads of options here
    -Omelets (provided you will eat eggs, if not, try tofu scramble)
    -Lentil meatloaf (I use Happy Herbivore's recipe)
    -Salads - a thousand and one ways to change them up. I add (not necessarily in the same salad) black beans, chickpeas, tofu, avocado - these all help make it more filling, along with whatever veggies you like. My favorite is a taco salad.
    -Oatmeal
    -Quinoa and rice are both filling and very inexpensive. Lots of recipes floating around to spice them up too.

    I eat fish sometimes, but mainly vegetarian.

    I like:
    Butternut squash and goats cheese risotto (or pea and mint etc)
    Spag bog or cottage pie made with quorn mince
    Hearty soups usually with lentils and loads of veg or potato and leek
    Roasted veg, halloumi and cous cous
    Fajitas with quorn pieces or butter beans
    Salads with butter or canellini beans, feta and wholewheat pasta

    Unfortunately I use canned but I also am interested in making my own. Gonna google that now :)
