Simple, Spicy, Refreshing Cucumbers

My dad taught me this recipe, and I have always loved it. Especially during summer. It's great because it's not your average "munch on some cucumbers" recipe, but it has a little spice and coolness to it! Love this!

What you need:

1/2-1 cucumber, peeled and seeded (if desired). Also you can slice into rounds, or dice for finer crunch
Juice of 1-2 lemons
Pinch of Cayenne
Pinch of salt

Mix all together. If you like more heat, add more cayenne. I like mine really soupy like, so I add a lot of lemon juice. Store in fridge.

    Another way is what I call 'Asian Spicy Cucumber'. This is a popular snack in China.

    Julienne cucumber into 2 inch lengths. Squeeze some Wasabi into a small dipping bowl (use about the same amount as you would use toothpaste on your toothbrush) and top it with about a tablespoon of soy sauce.

    Dip cucumber deep for the spicy bite, or dip shallower for just the soy flavour.

    My grandma's favorite cucumber recipe (and mine) slice cucumbers (rounds) red onions place in a shallow dish top with salt, pepper and garlic powder, healthy splash or white vinegar (white or red wine vinegar is really good too) dilute to your preference with water and refrigerate until cold and ready to serve.

    So yummy! :)

    You can make great raita as well. Mix chopped cucumber and tomato in yoghurt. season it with cumin and chilli powder. Really delicious, it works really well with rice and curry.
