Do you or are you able to eat them the next day?

    Yes.
I eat 1500 mon-thurs so I can eat 1800-2500 on the weekends and stay in my weekly goal (which averages 1800 cals a day)

Saying this, I am usually up on the scales at the start of the week, due to eating more food (the weight sitting in my stomach can read higher on the scales) and more high sodium food on the weekends. I don't always get rid of all the sodium weight by my official weigh in on Fridays if I had a particularly high sodium weekend, but it's just water weight not fat so I don't care much.

Some days, I'm a bit over. Others, I'm a bit under. As long as I'm averaging at my goal, then I call it good.

if you make up for it over the next few days it's fine.

Long term undereating is the issue.

I purposely stagger my daily goals so that I eat more on certain days as it fits my weekly activities, but make sure I meet my weekly target.
