Mini chocolate cheesecakes (91 calories a serving!)

I wish I had taken pictures to show you guys how cute these turned out, but more importantly....they were yummy! I am going to experiment with changing the flavors of the yogurts to see if other cheesecakes are just as yummy.
12 reduced-fat vanilla wafers
1/4 cup sugar
2 large egg whites
1 container of Yoplait 100 Greek vanilla yogurt
1 package Neufchatel cheese (8 oz)
1 tablespoon flour
1 teaspoon of vanilla extract
1 tablespoon of unsweetened cocoa powder (I used Hershey's special dark)
Line a muffin tin with cupcake liners and place a vanilla wafer in the bottom of each. Preheat oven to 350 F.
Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer. Gradually beat in yogurt, egg whites, and flour. Do not over beat. Pour into cupcake liners filling half way.
Bake 20-25 minutes or until center is almost set. Cool to room temperature then chill at least 1 hour in the refrigerator.

I don't know, but I think I am going to experiment with it soon! The sugar is 194 calories for 1/4 cup, so....that takes approximately 16 calories off each cheesecake...so, around 75 calories if made with splenda. I am not sure how it will taste though yet!!0 -
