Parmesan Oat Crusted Chicken Fingers

This is a great substitute for shake n bake type chicken thats made with oats, parmesan cheese and some spices. You can bake it or pan braise it (my preferred method). For best results, cut the chicken into long thin strips. You will need a food processor or blender to combine the ingredients.
2 garlic cloves, minced
1 cup old fashioned rolled oats
1/3 cup grated Parmesan cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 c. olive oil
2-3 large chicken breasts, cut into strips
Steps:
Put the olive oil in a shallow pan or dish. Cut the chicken and put into the oil and make sure its covered evenly. Set aside.
Combine the oats, parmesan cheese, garlic and spices into the processor and grind up until its like a slightly coarse powder. Take the chicken out of the oil and put it into the breading, covering it thoroughly.
Cover the inside of a shallow baking pan with non-stick cooking spray and bake at 400 degrees for about 20 minutes.
Pan braising method:
Thoroughly cover a frying pan with non-stick cooking spray and pre-heat it to a medium/low setting. Put the breaded chicken in the pan and cover. Cook 5 minutes covered, then flip. Cover and cook for additional 3-4 minutes (depending on how thick your cuts are). Breading should be slightly browned and chicken moist but cooked (165 degree internal temp).
Enjoy.

Great idea about using the food processor to get the oatmeal to a crumblike texture. Sounds delish. I am going to try this, but might try to cut down on oil by dredging in buttermilk or yoghurt instead of oil before coating in the crumbs. Will then spray some olive oil onto the chicken before baking.
I am going to steal the idea of the food processor for a similar recipe I use that coats the chicken in quinoa flakes.0 -

Thank you. I don't have a food processor but need to get one because I try to make lima bean hummus in my blender and
it's not so easy. I like the looks of your recipe and may try it. I like how MFP calculates everything for the recipes entered.
