I'm a new vegetarian and in need of a dinner idea. I have a few ears of fresh corn so I was thinking about doing oven roasted corn.
what should I pair with it to make it a balanced/filling meal?

Cheese and egg whites. I ate corn yesterday and I also had cheese and egg whites with it. And I'm a vegetarian, too.0

Beans! If you don't already love them, learn to, as a vegetarian they will be one your best friend. They are inexpensive and can be made into almost anything! Black beans are my personal favorite. They are full of iron, fiber, protein and antioxidants! Have you tried making black bean burgers yet? So yummy! And they go really well with corn. I eat beans at least four times a week because they are so delicious, and I'm not even a vegetarian. I put them on salad, eat them as a side, eat them with wd rice or eat them as the main meal.0

Mix the corn with brown rice, beans, cheese, and veggies. You can also add guacamole, salsa, or sour cream for additional flavoring. This has a good amount of protein, fats, carbs, and fibers. It's kinda like a chipotle bowl.0

This. Beans are loaded with protein. I eat lots of lentils and brown rice with steamed or blanched veggies. Try lentils (1 cup has the protein of 3 eggs) -- I like them because I'm lazy and don't have to soak them (they cook in about 30 minutes). Try the corn with lentils, steamed kale, and brown rice, and season with a little Tamari or toasted sesame seeds. The Tamari (soy sauce) has a lot of sodium, so just use a couple of spoons to taste at the table.0 -
I've been having pancakes a lot lately because my doctor said to eat more eggs. Current favourite is buckwheat pancakes stuffed with spinach and onion with nutmeg and a bit of feta. But I could see some sort of corn salsa working really well, too!0

Feel free to check out my diary for some ideas. I eat a pescetarian diet, so some of the meals have fish. You can also check out the group Happy Herbivores http://www.myfitnesspal.com/groups/home/45-happy-herbivores and this thread on there: http://www.myfitnesspal.com/topics/show/974337-pictures-of-what-you-re-eating You can always ask people for recipes and nutritional info if they aren't posted.0
