Frustration

Hi..
I am totally frustrated!!
I am trying to lose 8 kilos, and it's just not budging!
I drink plenty of water daily. I also like my coffee, but i drink it with a little skim milk and no sugar. I have one beer per week. (No soda or anything else that isn't mentioned here)
I run 10k two or three times a week in 50 min. I also try to get to Pilates and Yoga (though it gets hard with my busy schedule)
I work as a waitress (AKA running around throughout my entire shift + lifting heavy beer glasses!)- I also walk to work and back.
I do not eat junk. Once very two weeks or so I splurge on some semi sweet (plain) biscuits but that's it.
I eat lots of fruits and veggies. I eat only whole wheat bread (max two slices per day). (no pasta or white bread) If I consume any dairy, its super-low-fat.
I am also basically a vegetarian. I mean, I love chicken and steak, I just don't have time to cook it for myself, so I rarely eat it.
I have to admit that I don't eat in an orderly fashion, but as I have seen on other blogs here, math works! If I am only consuming 1,000 calories a day, there is no reason not to lose weight even if those calories are spread over a 5 hour period. (this is not necessarily the case, just an example)
I also notice that when I am stressed out, eating one meal a day, running around work, school etc. and do not have time for exercise, I lose weight. The second I get back on schedule, eat right, exercise etc., my weight doesn't budge.
What's going on?!

What are you goals and how long have you been tracking your diet? 1,000 calories seems LOW - if you're way under, your body could be in starvation mode and your metabolism shut down. You need to eat properly, exercise properly and sleep properly for your body to function as it should - and a properly functioning body is required prior to losing weight.0

7,ooo calories weekly minus two runs roughly 1,200 calories comes out to 5,800 calories a week.
First, start logging consistently on your food diary
Second, read about TDEE and how it is calculated.
Third, once your MACROS(Carbs, Fat, Proteins) are set eat the caloric amount of fat and protein daily--meet the minimums. The rest of your calories can come from the carbs.
Fourth, continue lifestyle but log daily and eat your calories back--
Fifth, post again in two weeks--AFTER you have logged consistently and see if you lost some weight.
You have an active lifestyle and your under eating significantly.0
