Guiltless Stuffed French Toast--200 calories!

My newest FAVORITE recipe!

1/4 cup egg white substitute (Im a vegetarian so you could use any egg substitute)
1/4 cup light soy milk (I use vanilla)
1 tsp cinnamon
pinch of splenda
pinch of brown sugar (optional)

Mix all of these together in a bowl.

2 slices low calorie bread (could really do this with just one slice if you want to save the 35 calories)
2 tblsp PB2

Spread the PB2 on the bread (a peanut butter sandwhich).
Dip the entire sandwhich in the egg mixture. Coat both sides evenly.

I use my George Foreman grill for this. I put the coated sandwhich on the grill and cook a few min.

I top with some mixed berries, 10 mini chocolate chips and the teeniest sprinkle of powdered sugar.

You could bring this down to about 150 cal if you cut the sandwhich in half and skip the brown sugar, powdered sugar and chocolate chips. But for under 200 calories-this is the perfect breakfast for me!

This is the most indulgent, guiltless, filling breakfast! I just love it and hope you do too!
