I prefer a little savory - turkey, brie, grapes, walnuts, some frsh herbs to garnish, served with a green salad with a vinaigrette. Perfect.

ricotta, 2 tbsp. coffee, raspberries, 1 tbsp. brown sugar

    or savoury!

sausage with sage and onions and butternut squash!

crab beignets with garlic aioli (ok so these are fried and not for an uber healthy eating day, but yummm!)

I love caramelizing bananas in a bit of maple syrup. I'll mix some unsweetened cocoa powder, stevia, and almond milk and let it thicken. Drizzle this yummy fudge over caramelized stuffed crepes and it's heaven.

And when I'm really treating myself? Nutella, fresh strawberries and a ton of whipped cream ^.^

Probably. I haven't tried. I'm not sure how well it would cook. It can be tricky at times. The ones I make are 8 inches and 115 calories, 15g of carbs, 2g of fat, 5g of protein. I use 3 eggs and lowfat milk. I used to have them with nutella or 3 cheeses (anything from goat cheese to gorgonzola and camembert) but now usually with a bit of sugar or strawberry preserves. I like them with ham and swiss too though... or smoked salmon and boursin/alouette cheese.

    Now I want crepes... lol.

I love Low fat or greek yogurt (any flavor) with Strawberries & Bananas (or any fruit) in my crepes for a sweet & healthy breakfast (I usually make my own crepes as well and add in a little vanilla flavoring for sweetness). Shredded or chopped (grilled or baked) chicken with Mushrooms and/or spinach and feta or goat cheese for a lunch or dinner option. You could make the crepes with Whole wheat flour as well.

I love crepes and my daughter is an expert at them. When she comes home from college we have a crepe breakfast morning where we get all kinds of fillings, like strawberries, ham, scrambled eggs with onion and mushroom, but my all time favorite is a Russian style with Chicken Paprika, made with onions, garlic, mushrooms, high quality paprika, a little butter, salt and pepper, and sour cream, some in the meat sauce and a dollop on top. No they are not light but I don't give a rip.

My favorite way to make crepes. I get whipped cream cheese squeeze a little lemon juice in it and than put a little powder sugar in it. Than I mix it up. I fill the crepes with that. Then I make a blueberry sauce and pour it in the middle of the crepes. The flavors are so good together!

Had the most lovely crepes last month in Paris; the savory crepe was lox and capers, and the dessert crepe had a baked pear and then it was drizzled with salted butter caramel.
