Canned coconut milk?

I discovered I have an obsession with this stuff! I could literally eat it right out of the can by the spoonful. I am looking for both full-fat and lite milk recipes, and wuld prefer recipes on thr lower side of the calorie spectrum.

I also only cook for myself, so any single-serving recipes would be loved! I am looking more for dessert recipes, but I'll look at savory dishes as well (however, I'm a vegetarian).

    This is one of my go to recipes. I just throw it all in my rice cooker and it cooks so quick! I usually don't put the pepper in because I normally don't have them on hand. Also, I've frozen individual servings of this and it freezes wonderfully.

    For breakfast...The night before combine 1/3 C coconut milk and 1/3 cup water with 1-2 tablespoons of chia seeds and 1 tsp vanilla. Let soak over night. It ends up kinda like tapioca pudding and is not super sweet. In the morning top with granola, nuts, fruit, whatever.

    It would also make a good dessert, especially if you add fruit and honey or something sugary.

    That is is my fav skinny taste recipe. Goes crazy good with her slowcooked jerk pork.

    As for cocount milk - I love it in curries....tried this recently and it was good:

    to marinate your meat, take a couple pounds of chicken/turkey, cubed. add in 1 can coconut milk, 1 teaspoon grated ginger, 1-2 tablespoons fish sauce (salty, depends how salty you like it!) and some curry powder/thai chilli. let sit at least 2 hours.

    also for the sauce, i add in some lime juice because i like it more citrus-y.

    i made thai peanut satay for lunch!

    Mahi Mahi in coconut milk-

    Need:
    1 4-6 oz Mahi Mahi filet (you can also use shrimp)
    1 tablespoon of fresh lime juice
    2 teaspoons of fresh grated ginger
    1 garlic clove, minced
    .75 cups light coconut milk
    1 teaspoon fish sauce
    1 tablespoon sliced green onions
    Salt, pepper, or other seasoning

    Season the fish with a bit of salt and pepper or other seasoning mix. Spray a pan with non-stick cooking spray and brown the fish on both sides. Add in the rest of the ingredients to the pan and stir. Once the fish flakes, it's finished. If you use shrimp, it's done when the shrimp is opaque.

    One serving. I use 4 ounces of fish and it comes out to 230 calories. I'll add in some seaweed noodles when I have them and I'll have vegetables and leafy greens as a side. Not bad with rice either, if you don't mind soupy rice (there's a lot of sauce).

    I'm a huge fan of coconut milk too (I recently found out some of the brands contain sulphates which explains my headaches after consuming them - I read the ingredients now).

    use it to poach your favorite white fish. with curry paste rubbed on top or in the liquid.
