Lentil Sloppy Joes

Lentil Sloppy Joes
2 cups Water
1 cup Lentils
1 small Onion, diced
1 Bell Pepper, diced
1 Carrot, diced
1 Clove Garlic, minced
1 Tbsp Chili Powder
1 tsp Paprika
28 oz can Diced Tomatoes (look for BPA free or use 3 fresh tomatoes chopped)
3 Tbsp Tomato Paste
2 Tbsp Brown Sugar
1 cup Water
1-2 Tbsp Worcestershire Sauce
1 tsp Mustard
Rinse the lentils thoroughly and place in a pot with the 2 cups of water. Bring to a boil, then lower to a simmer for approximately 20 minutes. Do not overcook. You want the lentils soft they will continue cooking with the other ingredients.
In a separate large pan, saute the onion, pepper and carrot in olive oil or water for 5-10 minutes. Add the garlic, chili powder and paprika. Cook stirring constantly for 2 minutes. Drain the lentils and add to the onion veggie mixture. Stir in remaining ingredients and simmer over medium heat for about 20- 30 minutes.
Cook the lentils.
Prep the veggies.
Cook the veggies.
Add the seasonings.
Add the lentils and remaining ingredients and allow to stew 20-30 minutes longer.
Serve on whole wheat buns.

This sounds awesome. Anything lentils can be good if done well with lots of spices. I always add more anyway.. I don't follow a recipe to a T. But lovely to have a guide.0

yes, they're beans and loaded with protein. One cup of lentils has the protein of 3 eggs (18 lentils vs 6 eggs). You don't have to soak them and they cook in about 30 minutes.
