Gluten Free and needing some helpful hints

I am really struggling still after 3 years of this gluten free eating. I really pay the price when I get any and I have been fighting weight gain weight loss and very very tired of it. I feel I have my pantry gluten free and then along comes a day and I have an attack and there goes the weight gain, achy joints, and feeling crappy. Takes 3 weeks to get back to track and on the run again. Any help would be greatly appreciated I really want to get back to where I was a year ago and keep it off and be healthy and gluten free!!

    Can you tell from your log which foods are maybe setting off an attack? I've found that even things that have no obvious gluten sources in the ingredients "may" set off an attack - possibly due to cross contamination someplace. I find it also helps to eat as much "whole" food as possible - the less processed , the less chance of "something" causing a problem.

    I am just a beginner at this gluten free eating, but I have a very dear friend who is a true celiac disease sufferer. I know that for her, the cross-contamination issue is so stressful. She has to be aware of every single thing she eats or she will suffer greatly. She has found a set of books that help her keep track of which brands are safe to eat and which may be cross-contaminated. I am going to send you a friend request, then I will be able to send you the information on that book. She checks every new product she is tempted to buy before she will make that purchase. I hope this info will help you. I will try to have it for you tomorrow (Tuesday).

    I know there are others so if you do a search I'm sure you can find them. I have to ask, are you sure it's gluten that's being triggered? I have gluten sensitivity issues but I discovered that my bigger issue is potatoes. Gluten will bother me if I eat it and I do have to remain gluten free but potatoes make me curl up in a ball on the couch, moaning and whimpering for hours. Then after the initial horrible pain subsides I have several days of milder but still miserable symptoms. I had thought all of that was caused by the gluten but I had been extremely careful and was still getting hit! Finally after reviewing what I'd been eating I started to see the pattern of when I was getting ill, always after potatoes. So I went potato free and carefully avoided them for a few weeks then ate some to test my theory. Yep. Potatoes. I love them but they hate me.

    Look for foods that may have hidden gluten (seasonings, blue cheese, etc) and keep a close eye on the preparation that goes into your food so you avoid cross contamination but also look beyond just gluten to see if something else may be triggering you. Most celiacs also have dairy issues and for a lot of us there are several intolerances (I'm completely grain free at this point and do very limited dairy.)

    Thank you for all your thoughts I will start checking them out. I only use Almond milk and don't do much for dairy but I will start checking and logging what I have eaten a little more closely to see .
