Bake an Egg in an Avocado for a Fast and Healthy Breakfast Treat

If you have an avocado that's too firm to use for something else, or you're just in the mood for something new and healthy for breakfast, slice it in half, remove the pit, and carve out a little space in the center. Crack an egg where the pit was, and bake. In a few minutes, you'll have a delicious, protein and vitamin-packed breakfast treat that's rich enough to keep you going all morning.

Preheat oven to 425 and put a cast iron pan in there.
Slice avocado in half, take out pit.
Take pan out of oven, put avocado half in pan, and crack an egg in the center where the pit was.
Place in oven and cook till your eggs are done how you desire!

    No I'm pretty sure it's one half and one egg only. A whole avocado is around 300 calories by itself.

    That sounds good, the bacon sounds better and I like to do a grilled Avocado version with grilled chicken or fajita chicken meat!

    I have never been a fan of warm avocado, but I must admit that the picture of the one with bacon looked delicious! I'm going to have to give it a try :)

    I take the pit out, use a yolk separator and slide it into the hole. Grind some sea salt and fresh pepper and bake. After I take it out, I drizzle it with a bit of honey. Yum, I feel like I'm at a tropical spa retreat! The egg whites I save for later to make an omelet for lunch :)
