Looking for great, low-carb Vegan/Vegetarian recipes!

So I don't know if my Google-fu is weakening or what, but I can't find any great recipes that are both low-carb and vegan/vegetarian! My problem is that I am currently following the South Beach diet (which means that you have to eat a ton of protein and almost no carbs- so no bread, very little fruit, etc.) but I have been vegetarian in the past and I am passionate about trying it again!

Does anyone have any excellent recipes they would be willing to share? :)

  • Whenever I'm looking to cook vegetarian food I go to the blog Orangette, specifically her index of recipes. The meals are not fussy (read: simple to cook) and there is a whole section of vegetarian entrees. Here is the recipe page- http://recipesorangette.blogspot.com/

    I have made the "Warm Butternut and Chickpea Salad with Tahini" probably a dozen times and the "Gingered Carrot Soup with Avocado" is a go to snack for me.

    vegweb.com, you can find all kinds of vegan recipes. I use it all the time.

    Rose Elliott has a book out called The Low Carb Diet Vegetarian Cook Book. Lots of ideas there.
