Green Bean Stroganoff what? Not just a side dish anymore!

I was just speaking with my MFP buddies and thought I would share what I do to lower the carbs on certain homemade dishes that request noodles. So many had not heard or tried this before.

Instead of noodles, I use frozen French style green beans and they are yummy to me!! Don't knock it, give it a try :)

Obviously,like any other veggie replacement for noodles, don't be expecting it to taste like noodles. But they are a great veggie filler that is lower in carbs, easy to find, CHEAP and easy to prepare. I myself just nuke a cup of French style green beans and top it with whatever would have been on noodles or rice.

So far, I LOVE it with homemade low fat/calorie venison or beef stroganoff.

Also very good with Spaghetti sauce (with or without meat), low fat/calorie Alfredo sauce (with or without meat) and pretty much anything that is a sauce or gravy you can come up with. Happy eating :)

    This sounds delish for white sauces but I am no too sure about red sauces. Good to find something that works for you though :)

    I love this idea! I've also heard of subbing broccoli slaw veggie mix for the noddles (you put it in a pan with a bit of water and simmer until water is gone and slaw mix is soft). Now I'll have to try both!

  • There are these noodles that I was reading about that you may be able to you they're called shirataki noodles and they could be found at health stores or even an asian store in the area. They're apparently very low in calories, gluten free and are even made in a tofu form. I have yet to try this yet, but I have heard nothing but good things and that they taste just like a noodle.

    I have used all the above they are all good. Also I use squash. :smile:
