Summer Potluck (vegetarian)

Hi All,

I am hosting a summer potluck and I want to make something healthy for myself and others to munch on. I am vegetarian, so I was thinking of making Vietnamese salad/summer rolls with tofu and peanut sauce. I have never made them before, so it may go terribly wrong.

Do you have any healthy ideas on what to make for a summer themed potluck?

    A cucumber- tomatoe salad is not only visually appealing but tastes great. There are many versions of it... just google and pick one. I made it a couple of days ago using Rachel Ray's recipe .

    i usually make a black bean and orzo salad with diced jalapeno, tomato, yellow or orange bell pepper and lime vinaigrette. sometimes i throw in some corn.

    Salad of Goodness

    1 can black beans
    1 can sweet white corn
    1 can chick peas
    1 cup grape tomatoes (halved or quartered depending on size)
    1 yellow or orange bell pepper chopped
    1/2 red onion chopped
    handful cilantro chopped
    2 avocados chopped (if out of season, guacamole can be used instead)
    4 oz. feta crumbled
    juice of two small limes (for some reason the large ones I buy are always dry)
    about 2 tbsp red wine vinegar (should be equal amount as lime juice so may vary)

    Mix, refrigerate.

    It's a ton of chopping, but so good. I've also varied it up by using different veggies like jicama thrown in.

    Gazpacho shooters- Just pour gazpacho into small clear plastic cups with a swirl of sour cream (or greek yogurt) and a little slice of avocado.

    Crunchy veggie tray with various dips- different flavors of hummus (try adding roasted red peppers, roasted tomatoes, olives, pine nuts, or oven roasted garlic) tapenade, babaganouj, guacamole.

    Endive leaves filled with:
    >>chopped dried figs, bleu cheese, and walnuts - drizzle a little balsamic vinegar on top.
    >>dried cranberries, goat cheese, and chopped toasted hazelnuts
    >>diced apple, gouda or cheddar cheese, walnuts
    *These are perfect finger foods!

    Crimini mushrooms with no stems, baked and filled with pesto and bocconcini (little bite-sized mozzarella ball)

    Caprese salad (sliced tomatoes -red and yellow are yummy-, slices of mozzarella, basil leaves, drizzled with olive oil and balsamic vinegar)

    Watermelon-feta-mint salad.
