Potluck boo!

We are having a potluck at work on the 4th of july... the sign up sheet is loaded with CRAP! Any suggestions for something healthy and tasty to serve? Thanks!

    We are having a potluck at work on July 2 :)

    I signed up to bring my Three Bean Salad:

    1.5 cups cooked kidney beans
    1.5 cups cooked chickpeas
    2 cups cooked green beans
    1/2 white onion, finely diced
    1/2 green bell pepper, finely diced

    Dressing:

    2 T olive oil
    2 T apple cider vinegar
    parsley, salt & pepper to taste

    Mix dressing, stir in beans, onion and bell pepper and let marinate for at least 2 hours. It's super yummy!

    We do potlucks a lot and everyone brings in the standard stuff (mostly high in cals).

    But the one thing they always demand that i bring is a corn salad i make. Very healthy and usually the first thing that runs out

    Fresh corn off the cob (not frozen or canned)
    diced bell peppers (multiple colors)
    diced onion
    diced jalepeno
    scallions
    fresh ground pepper
    feta or blue cheese
    cilantro

    addition of black beans optional

    and a dressing made of EVOO, lime or lemon juice, little honey, and then whatever seasonings you like (garlic powder, onion, chili powder, or even just a BBQ rub)

    it's a crowd favorite
