what can you replace a potato with?

I have heard of replacing spaghetti with spaghetti squash and I know there are some others. But I just made an awesome cream of celery soup today which called for potatoes and I am trying to think what I can use in its place next time I make it thats not so carby but is a similar replacement

Whats wrong with carbs? Just eat a broth or plain meat stew if carbs are an issue.0

Since you said your's was a cream of celery soup, I can imagine cubes of Jicama or water chestnuts to give a little contrast, or cooked make a more soft addition . Maybe the recipe required potatoes for added creaminess. In this case I would just leave them out.0

You could use any winter squash (cubed and baked). Butternut would be a good choice.0

As for the OP, I think I would just omit it from the soup because nothing is the same. Another root veggie would probably be best, but they will also be carby.
I don't know the recipe but if I were omitting the potato in a soup I would probably throw in carrots.0 -

^^^ Potatoes get a bad rap...but the potassium is in the skin so if you're looking for high potassium foods make sure you eat the skin too.0 -
