Does frying really kill the nutritional value in food?

If I were to scramble eggs or saute some vegetables - not using butters or fats,
or make a vegetable stir-fry,
would it basically be the same as steaming where nutrition is concerned?

For all intents and purposes, yes. You just have to make sure you account for whatever you fry in in your calorie counts. My dietician recommended Original PAM for cooking most things, and I have had no issues with it over the past year and a half.0
