Spinach, rice, and cottage cheese chicken
In my search for good tasting, low calorie food ideas I came up with this.
Take two large, skinless/boneless chicken breasts and flatten so that they are about 1/4 - 1/2 thick. This can get messy so I suggest putting them between a layer of patchement paper and I used my rolling pin to beat them down.
In a bowl mix 1 cup of fresh baby spinach, 1/2 cup of 1% cottage cheese and 1/2 cup of rice (i used white 5 minute rice as that is all I had on hand)
You may want to add a bit of pepper or some seasoning, as it can be a tad bland for some people (my husband)
Place the mixture into the middle of the flattened chicken, roll, I used tooth picks to hold together.
Place on cookie sheet, bake at 350F, until chicken is cooked through. Remember it's not very thick so it doesn't take long. *Cant remember how long i cooked mine for*
