Cilantro Yogurt salad dressing

Kind of like a ranch, but very good for you. I like to do this in my magic bullet.

1 6oz container Fage 0% greek yogurt
handful fresh cilantro, stems removed
2 cloves garlic, minced
2 tablespoons red wine vinegar
couple drops of olive oil

Blend it all together, and add a little more vinegar if you need it to be more watery.

120 calories for the whole lot, makes a cup, so 2 tablespoons = 30 calories.

    Use less vinegar...the yogurt is thick so it would work great as a mayo substitute. Good plan!

    That's a good idea. I wonder how long this would last in my fridge after I mix it up?

    I wouldn't keep it more than a week, due to the yogurt and fresh ingredients.

    Flagging this for later... sounds good! I may try making it with yogurt cheese instead of greek yogurt, since greek yogurt can be more expensive. (Yogurt cheese is where you drain the water out of regular yogurt - it is very similar in consistency to greek yogurt.)

  • Thank you for the recipe. It reminds me of the cilantro dressing I get from El Pollo Loco. I use it for their salad, grilled chicken, or chicken tacos. I will be trying this recipe very soon.
