Anyone have any good chicken salad recipes?

    I found this one on MFP a long time ago. It is AWESOME.

    No Mayo Chicken Salad

    Okay, so I LOVE chicken salad. I try my best not to eat it due to the mounds of mayo and fat. I've even tried the low-fat mayo, but it's still not good for you. Yesterday I came across a no mayo recipe and was very skeptical. I had chicken in the fridge that had to be cooked so I tried it out. It was freaking amazing. I served mine on a whole wheat tortilla.


    serves 3 (makes ~3 cups)

    1 large chicken breast, cooked, cooled, and chopped

    1/2 cup non-fat plain greek yogurt

    2 Tbsp dijon mustard

    1/2 lemon, juice

    1/8 tsp dried dill weed

    1 stick celery, diced

    4 celery leaves (from the top of your celery stick), minced

    2 Tbsp red onion, diced

    1/2 cup apple, cut into chunks

    1 heaping Tbsp raisins

    6 walnuts, roughly chopped

    8 grapes, sliced in half

    In a large bowl, combine all ingredients. And done.

    Be sure to let your chicken cool before mixing it all together. Enjoy! <3

    Because I'm awesome I put all of the ingredients in MFP.

    Fat: 16
    Sodium: 460
    Carbs: 65
    Sugars: 22
    Protein: 50

    hungry girl.com has sweet 'n chunky chicken salad, go greek chicken salad and scoopable chinese chicken salad .....I have made all 3 in the past and they are all awesome .....If for some reason you can't find them let me know and I will post the recipes for you

    Plucked and shredded rotisserie chicken
    dijon mustard
    mayo
    chopped apple, celery, green onion
    sliced roasted almonds

    I make mine with toasted almonds and cilantro which is yummy!

    This was my delicious salad for lunch today:)

    1/2 Chicken breast grilled
    3 cups of 50/50 spinach spring mix
    1 large Strawberry
    1 hard boiled egg
    sprinkled with a bit of feta cheese
    tablespoon olive oil
    balsamic vinegar
    a very small amount of fried onions, just for texture
    salt n' peppa

    I read on the thread about avocados that you can use an avocado in place of mayo.

    I tried it with egg salad and it was delicious!!!

  • I take a chicken salad to school every day, it's damn good! This is the recipe that comes to about 150 calories:
    2 Grilled Chicken Tenderloins (cooked with about a tablespoon of Teriyaki sauce)
    2 cups Lettuce
    50g (about a quarter) Red Capsicum
    2 or 3 large Radishes
    1/2 cup (not sure in grams) Carrot
    6 Snow Peas

    I generally don't add dressing as I dont like it, but you could always add some :)

    Weight Watchers Tex Mex Chicken Salad

    SERIOUSLY AMAZING!!! I doubled the seasoning, though and also seasoned the chicken a little while cooking it.

    1 1/4 pound(s) uncooked boneless skinless chicken breast(s)
    1/2 cup(s) fat free mayonnaise
    1/4 cup(s) fat free sour cream
    1/2 tsp ground cumin
    1/4 tsp chili powder
    1 small sweet red pepper(s), chopped
    1 small green pepper(s), chopped
    2 medium uncooked scallion(s), sliced
    15 1/4 oz canned yellow corn, drained and rinsed
    1 cup(s) canned black beans, drained and rinsed
    Instructions

    Preheat oven to 350ºF. Place chicken in a glass baking dish and bake until juices run clear, about 25 minutes. Chop into bite-size pieces; set aside. (Or save time by purchasing already cooked boneless, skinless chicken breast.)

    In a medium bowl, combine mayonnaise, sour cream, cumin and chili powder.

    Stir in chicken, peppers, scallions and corn; mix well. Gently fold in beans; cover and chill at least two hours. Yields about 1 cup per serving.

    I love my grilled chicken salads now. And not too complicated. I do grilled chicken strips, mixed romaine lettuce, tomatoes, red onions (will never eat salad again without it), cucumbers, and my favorite, avocado. It's so delicious. And I sprinkle a little bit of salt and drizzle some extra virgin olive oil and wala, simple grilled chicken salad not to many calories. P.S. I buy the big Harvestland bag of pre-cooked grilled chicken strips at BJ's. Great buy for an easy healthy meal.
