Evening Shifts- what to do for dinner?

I work evening shifts, I never know what to pack for food and end up bringing too little and find myself searching for the nearest vending machine or hitting up the cafeteria completely disregarding my boring packed dinner.
What do you make for dinner to bring along on your evening shift? ( I work 3-11pm)

Today I brought left-overs - Smoked Sausage and potato wedges. Also, watermelon and celery for snacking. I keep peanut butter at my desk and so I put some on the celery. I also like bringing morning star black bean burgers and just microwave them for a few minutes and eat them with thin whole grain buns and a little salsa and avacado. Sometimes I bring rice or soup or frozen dinners. I have herbal tea at my desk, too and I try to go for that instead of soda or other stuff. I usually try to bring left-overs or a simple pbj but on days I forget lunch Subway is right next door.0
