I recently bought a casserole dish, but am at a little bit of a loss as to what to make in it.
Any easy, fun, healthy -- and kid friendly? -- recipes to share, anyone?

Casseroles are typically a bit of this and a bit of that.
You generally want a "carb" as the base - pick from pasta, rice, quinoa or legumes (beans or lentils) - legumes and quinoa are also good sources of vegetable protein. Could also be a mix of any of the above
Add some sauce - could be tomato (italian, mexican, barbecue, etc), curry, thai, chinese, etc
Add some vegetables - whatever you like "best"
Optionally, add some meat and/or cheese
Layer or mix together and bake at least until heated through/bubbly0 -

This one. I make it healthier by adding more veggies, using Turkey (I'm very sneaky) and I cut calories my making my own chicken gravy/roux. I also add cheddar and jalapenos to the crust and sprinkle with garlic.
