I love me some lumpia, esp lumpia shanghai but it's almost always fried, has anyone baked lumpia or have a recipe for it?

Mom has switched from deep frying lumpia to baking it in the oven. I don't have her recipe handy but found the link below:

I tried this with taquitos and it comes out alright. Nothing will replace the actual texture and flavor of frying.

Sometimes you can get better luck baking things to a nice crispy texture if you use one of those pans with holes all in it. My friend does it for baked potato chips, so it might work.

Wow! This is so weird that you posted this question, because I made and baked some Lumpia last night! I've made them for years and always fried them. This was my first time baking them and the came out **alright**. I was surprised that not only did they not have that crunch that we like so well (kinda crunchy, but not really), but even the taste was more bland. For some reason, I didn't think canola oil added that much flavor, but evidently I was wrong.

I only rolled and baked 10 of them just to test them being baked. I plan on rolling the rest and putting them in the freezer until I lose a bit more weight, because I plan on just frying them, and adjusting my diet and workout to accommodate the days that I eat them.

I have baked lumpia before and it wasn't the same, ok though. I figure if I want some lumpia that bad, I'll fry it.

They look good in baked form...I will have to try.

I am an onion ring fanatic, and I miss the real deal deep fried ones. I've been making these once in a while to compensate, and my whole family loves them! http://bsinthekitchen.com/baked-onion-rings/

You should bake these right on the sheet pan...they brown better. Wire mesh rack is good for some baked things, but not others. I find that with direct contact to the sheet pan I usually get better browning. Just sayin'.

I'm definitely going to take a look at this--we love lumpia, hate deep frying. Haven't made it for awhile.
