Fruity Weetabix cakes

Serves 12 - (i only have a cupcake thingy that holds 6 so i had to make 2 batches)

Ingredients;

3 weetabix crushed
150g self raising flour
50g butter/marg- whatever you have!
30g soft brown sugar
1 medium egg
100g dried fruit- whatever you fancy. This recipe had glacier cherries and sultanas but i just bought a bag of mixed dried fruit
2 small bananas
1/2 teaspoon of ground cinnamon

Directions;

Pre-heat the oven at 200c/ 400f /6 for gas
mash up the bananas without the skins on obviously!
beat the egg and mix together

in a separate bowl mix the flour, weetabix, cinnamon and butter until it looks like breadcrumbs, then add the sugar.
blend the banana mixture with it and mix well - it will be all gooey and sticky! Then mix in the dried fruit.

each muffin mixture should be about 53g when you put it into its case.
Bake for 15-20 mins until they have risen a bit and gone golden brown.

When they are finished you can sprinkle with Demerara sugar or drizzle with honey if you like :-)

When i put this into the recipe maker on mfp it told me that each little cake will be about 132 calories
