slow cooker salsa chicken

SLOW-COOKER SALSA CHICKEN!
Ingredients
2 lbs. (32 oz.) chicken breasts, boneless and skinless
1 cup salsa, homemade or purchased
1 cup petite diced canned tomatoes (choose low-sodium)
2 tbsp. taco seasoning
1 cup onions, diced fine
1/2 cup celery diced fine
1/2 cup carrots, shredded
3 tbsp. sour c@ream, reduced fat
Directions
Place the chicken in a slow cooker. Sprinkle the taco seasoning over the meat then layer the vegetables and salsa on top. Pour a half cup water over the mixture, set on low and cook for 6-8 hours. The meat is cooked when it shreds or reaches an internal temperature of 165°F. When ready to serve, break up the chicken with two forks then stir in the sour cream.
Makes eight 1 cup servings.

this is a fave in our house, try it with cauliflower mash or cauli rice to reduce calories yumm also I use 2 jars salsa and no taco seasoning, and no sour cream it doesnt really need it0

I use to bake my chicken like this with just salsa on top, not all of the other ingredients but I never even thought of doing it in the crock pot. That sounds delicious & my kids would probably love it too!0

So I made a similiar.... and simplier version that was GREAT
4 - frozen boneless skinless chicken breasts
1 - Package Taco Seasoning
1- JAr of salsa
Put the chicken in the crockpot, pour the taco seasoning over the chicken then pour the salsa over.
Cook on low 6-8 hours ( I left mine in a lil over 7 )
Pull chicken apart with 2 forks....
I searved in Taco Shells with lettuce and hot sauce0 -
EE GADZ, do not, repeat, do not use Mango Peach salsa. Was.Not.Good. I will do this again, for sure, but next time I think will use green chili.0
