Double Chocolate Protein Pancakes
I've been experimenting with protein pancakes recently, and this morning's edition was so delicious, I had to share!
Ingredients:
1 scoop chocolate protein powder (I used Optimum Nutrition Soy)
2 tbs egg white (I used the kind from a carton, "Real Egg" from Costco)
4-6 tbs water
30 semi-sweet chocolate chips
Directions: while your non-stick pan is heating, mix together the protein powder, egg white, and enough water to make a normal pancake batter consistency. After you've poured out your pancake batter onto the pan, add the chocolate chips on top, distributing them evenly. Flip and cook the other side... they cook up just like any other pancakes.

They're good enough to eat plain, but I spread mine with a little Biscoff cookie butter. They'd also be great with banana, strawberries, peanut butter, lite cool whip...
