amazing chicken lasagne

8 lasagne sheets
400 grams chicken breast meat only
ratatouille - either home made or tinned, i use tinned, 3x 500gram tins
200 grams cheddar
50 grams flour
250ml milk
Method:
heat milk and intermittently add flour to thicken, (bechamel sauce)
mix uncooked chicken and ratatouille
place a layer of the ratatouille/chicken mix in the bottom of a baking dish,
layer of lasagne sheets,
layer of the ratatouille/chicken mix
layer of lasagne sheets,
bechamel sauce,
stick it in the overn 200 degrees celcius for 50minutes
Sprinkle cheese over the top and bake for a further 10 minutes.
take out and leave to stand for 20-30 minutes (allows it to firm up to make serving easy)
this dish tastes amazing, by not pre-cooking or sealing the chiken breast it soaks up all the moisture, and tastes amazing,
plus unlike a traditional Beef lasagne , the chicken/ratatouille mix takes so little time to prepare this dish can easily be done in the evening.
with the quantities above, it serves 6 people a 423 calorie portion

thanks, im trying to convert lasagen lovers to chicken, one person at a time, means you can have lasagne in the week and not just on the weekends when you have time to prepare0
