Need sample menus for a day

History -- I grew up in a home with a mom who binged and purged or starved. Her answer to every problem or illness was to withhold food. I was hungry all the time and called "fat" even when I didn't have a drop on my bones.
I went off to college and ate like a "normal" person. I felt great and looked great.
Fastforward -- I had 3 babies later in life. I have kept some of the baby belly "hangover" (emergency c-section didn't help). I went to a dr who put me on this "miracle diet" as he called it (it was fat free vegan). I followed it religiously and GAINED weight. I now know I was consuming about 600-700 calories on this diet.
I went to a new specialist who told me to increase my calories. I am using the target found here which is 1560 (which is in the ballpark she suggested). While I have had some weight fluctuations, there is nothing major. I am feeling much better and exercising but the weight is not changing.
I see some of you eating much more than I do but I can't seem to hit that number without some kind of "less clean" foods or "healthy fatty" foods. I am usually mentally done and full at just below 1000.
I would like to see some menus of how you eat clean at that level -- especially if you are a woman in the 50ish age range.

I am also a mom and had C Sections-it can be rough to get your body back due to the muscle damage.
My diary is open to friends so you are welcome to use it for ideas. I like to try new recipes and cook a good bit. I do eat the same things for breakfast and lunch, I have several options that I choose from because it makes it easy for me to plan. Dinner is when I try new recipes.
Some of my breakfast choices are:
1) Zone Bar
2) 1 large egg and 2 pieces of toast with sugar free jelly
3) peanut butter toast
4) shredded wheat or cheerios with 1/2 cup of milk
5) bowl of oatmeal
Lunch:
1) Tomato sandwich
2) tuna salad-canned tuna on romaine, spinach and arugula with balsalmic dressing
3) tuna sandwich
5) BLT sandwich with light mayo and center cut bacon
6) turkey burger or veggie burger
7) medium baked potato with light sour cream (I eat this in the winter).0 -
Don't worry about "clean" eating...its pretty much a meaningless overly broad concept. Eat good food, in measure amounts. You know which foods are better choices..fresh over processed, all that stuff. But eat food that satisfies you...you're not being punished, you're living your life! You can do this!0

You don't have to eat clean or healthy to lose weight. Your body really doesn't care where your calories come from. Eat whatever you want and just stay in budget. You won't lose weight any faster because you live on organic carrots and yak milk. I maintain 115 lbs on a lot of things that aren't "clean" and have for over 2 years. Life is to live and enjoy. Eat the bacon!0

Feel free to look through my diary! Lifting with a bit of HIIT is my routine so I focus on my macros (carbs/protein/fat) more than anything. I mostly pick "good" foods but if I can fit crappy food into my macros I'll have it xD I don't have it in me to say 'No I can never have that again' ya know? Sunday and Monday were unexpected take out days but I still made it fit!
Also important to note: I cycle calories according to workout days - 1508 on non workout days (monday/wednesday/friday) and 1708 on workout days. I typically eat back most of my exercise calories but it really depends on my appetite.
Feel free to send a friend request if you want! I was an anorexic a few years ago so I understand histories of disordered eating. It can be very difficult to overcome...but it's never impossible!0
