104 vegetarian meals

i was reviewing my new year's resolutions to track my progress (does anyone else do this? i know, d.o.r.k.) and one of my goals was to start feeding my family two meatless meals a week. i can honestly say that we average one vegetarian meal a week, but i'd really like to focus on adding another one to my menu each week.

can you help me come up with 104 vegetarian meals that focus on protien (2 growing football players, one meat-loving husband and pcos-low-carb me)?

some of the meatless meals we have done already are:
cheese enchiladas
black bean burritos
veggie soup
veggie kabobs
spinach pesto on wheat pasta with cherry tomatoes, yellow peppers and parmesan cheese
four cheese stuffed mushrooms

chili relleno casserole

    try making channa masala... Its easy and has lots of protein for your football players :) Serve them some warmed naan (a flatbread) on the side and a dollop of plain yogurt. Make it as spicy (or not) as your family likes. I like mine with a cool and sweet fruit salad as a side. For some reason, i like the mix of hot and spicy with cool and sweet :)

    One thing I didn't see on your list is fried rice. Add in lots of veggies, like bell peppers, asparagus, peas, carrots, bean sprouts, and broccoli. Using brown rice increases the fiber and flavor, and the egg in the fried rice adds protein. Also, I know you said you didn't like tofu, but if you crumble it up and throw it in with the egg, it adds a lot of protein and you don't even notice it's there! Good luck!

    It tastes a bit like spicy sausage or pepperoni, and personally I find the texture MUCH better than Tofu (which I noticed you don't eat).

    That recipe could easily be modified if you wanted a not-so-spice-full version to use in receipes that called for something a bit more plain. I googled Seitan recipes and found a TON - it's quite versatile.

    Don't think I saw daal on your list - it's made with lentils and you can add extra veg if you feel like it (such as peppers, spinach, squashes).

    I also do zucchini, carrot and tagliatelle strips cooked with garlic and olive oil. Really quick and simple.

    Spinach and chickpea curry
    Butternut squash risotto
    Fajitas

    And loads of 'chuck it in the pot' stuff (I'm a veggie - we know better than to mess around with food!) LOL

    QUINOA!!!! A complete protein and easily used by the human body. Use it anywhere you would use rice to pack your meal full of more nutrition. Also sprout it and put on salads, wraps, sandwiches, and even over cereal or oatmeal. Quinoa is extrememly versatile & quick to prepare.....check out this thread on food.com with tons of recipes!!

    Wow, I didn't realize how many new veggie recipes I'd tried lately! We often do spaghetti with marinara sauce or veggie pizza as well.

    Also here is a download for More Than 1000 Vegan Recipes (its an application & I have downloaded & Norton came back with it being safe). There is a lot of soy however I really use it for the ethnic categories...well the Asian catergory has soy but you can always substitute mushrooms in stir frys, in some baked goods bananas work instead, and eggplant actually works in others :D

    I LIVE off of FarEast brand Rice Pilaf and Lentil mix. It's delicious, full of protein, and you can add your own seasonings and a pinch of cheese to change up the flavor!
    I'm the only vegetarian in my family and I'm rubbish at cooking, so it's a great choice for me. I can prepare stuff that comes in a box. :bigsmile:
