How would you figure the calories for this recipe?

I've recently started tracking calories, but get confused when it comes to things like my fajitas. It has chicken breast, peppers, onion, and tomatoes all sliced and put in a 9x13 dish. Then I pour a mixture of 2 tbsp olive oil, juice of one lime, and spices (chili powder, cumin, etc), mix it to coat everything, and bake. With stuff like this, I typically add the calories for all the ingredients and then measure out 1/2 cup portions and divide by however many portions I get.

But, for things like marinades that use oil, do you count all the oil you add, even though the food isn't going to absorb all of it? For example, with these fajitas, there is quite a bit of juices on the bottom when they're done baking from the chicken, veggies, and I'm assuming oil and lime juice. Do you just estimate about 1 tblsp actually is in the food? Or do you add it all in to be better safe than sorry?

    If you click the food tab, underneath should be a 'recipes' button which you can enter your own recipies in and set it to however many people you're serving it for. Then you can add it to your diary - they also get stored so that if it's a meal you make often, you can go back and add it over and over.

    I wouldn't estimate. I use a measuring spoon so that it's precise.

    Ditto the recipes function here and yes, include the exact amount of marinade you are using in the recipe, rather than trying to guess how much is actually left on the food.
