    The problem I had with doing this is that the egg cooked unevenly and wasn't appealing at all.

    I've taken to poaching eggs and laying them on top of avocado instead.

    I just saw this recipe in a magazine, as well - can't remember if it was Shape or Women's Health - but thought it sounded yummy. I need to try it! Just got some fresh avocados at the grocery store last night. Yum yum

    Looked so delicious. Tasted so awful. I guess I am one of those peeps who just can stomach warm avocado. Will be poaching my eggs and serving it on slices...Glad others enjoyed it!
