Freezable Healthy Dinners

Hey there :)
I'm after some recipes for healthy and low calorie dinners that I can make in bulk on the weekend, portion out and freeze and that don't cost the earth to make. Any ideas would be appreciated!

    Portion out one palm sized portion of mince meat per person and individually wrap in bags so that you can bring them out whenever you want to make spaghetti bolognese. Worked really well for me (and I wasn't even on MFP back then).

    Bolognese sauce
    Marinara sauce
    Beef stroganoff
    Chicken pasta bake
    Steak
    Chicken breast
    Teriyaki chicken
    Roast lamb and veg
    Roast chicken and veg
    Aniseed and ginger Beef stew

    Reheat these to serve in small portions alongside steamed vegetables and pasta or rice.

    1. Chilli! Freezes excellent, I freeze serving size portions so it's easy to take out when needed. Saute onions, peppers, mushrooms (and whatever else you like) in a little bit of olive oil, then add tomato puree. I'm not a big fan of meat so I *kitten* tofu and beans as protein, but you could put pieces of chicken breast after cooking them in a separate pan.
    2. Fish. I always have some frozen fish fillets in my kitchen. Defrosts really fast (about 30 min if left on the counter top but you can use microwave too - just be careful not too cook it). Then I just sprinkle it with some spices and fry in a non-stick pan with about 0.5 tsp of olive oil, covered, medium heat. Flip half-way through, done in about 10 min. Serve with a choice of fresh salad, pickles, boiled string beans, broccoli, cauliflower, or sweet potato (I cut up sweet potato in bite size pieces, place on a plate, put spices and stick in the microwave for about 10 min on high, no water needed - so much faster than baking it...)
    3. Steak / pork chop, done in cast iron pan in about 15 min.
    4. Spaghetti sauce.
    5. Baked meat patties. Mix ground meat of choice with an egg, spices, diced onion, garlic, and spices (salt, pepper, can add worchestershire or hot sauce), then add breadcrumbs as needed to get the right consistency, form patties, roll in braedcrumbs to cover the surface. Place on a cookie sheet or pyrex dish (no oil needed, unless you have very lean meat - e.g. 95% fat free then use some PAM) and bake in 375 F for about 40 min or until golden-brown. Let cool down, tehn place in a plastic container and freeze. Easy reheat in the microwave or slice in half and use cold for sandwiches.

    But honestly, I freeze most of my foods... Like a stir fry rice, quinoa salads... There's not too many things that you couldn't freeze. I'm a lazy person but want to eat well so I cook big batches and freeze stuff. Feel free to shoot me a message if you have any more specific question :)

    i don't know what healthy is to you. we make a lot of chinese stir fries and whatever is leftover, i take to work. if it sits in the fridge for more than a couple of days, i freeze it in microwave containers with brown rice.

    I make a couple dozen black bean, butternut squash and mozzarella cheese burritos that I freeze to eat for lunches and quick dinners.
    Whenever we have soup, I freeze the leftovers in portion containers for later.
