WANTED: Low Fat/Carb recipe for No Bake PB2 Cookies!

1/4 cup PB2
1/4 raw almonds
1/4 cup oat flour
1/4 unsweetened coconut shreds
1 cup soft medjool dats or 1 cup any dried fruit (raisins, craisins, etc prefereably soaked to soften, or 1/4 cup honey, maple syrup or coconut nectar to sweeten)
dash of cinnamon and/or nutmeg optional
In a food processor process the dry ingredients (PB2, almonds, oat flour, coconut shreds, cinnamon/nutmeg) until fine crumbs and well mixed. Add in the dried fruit or liquid sweetener and blend again until well combined. A soft dough should form, then roll the dough into balls or press into pan lined with parchment or plastic and refrigerate for 1 hour or freeze for 30 min until firm and cut into desired squares and enjoy!
These are very low carb, all natural and full of healthy fats and fiber!
You can also make these chocolate by adding an extra 1/4 cup of cocoa powder and slightly increasing the dried fruit or liquid sweetener for desired sweetness.0 -
