Greek Yogurt Pancakes

When it comes to healthy breakfasts, this probably isn't the best choice out there but today I decided I'd cheat ... kind of.
So what better than some homemade pancakes? I got the recipe from here (http://www.lawfullyweddedwife.com/2013/06/27/greek-yogurt-pancakes/) but I'll post it below too!
Ingredients (makes 4 fat pancakes):
2 eggs
1/2 t. vanilla extract
7 T. all-purpose flour
1/4 t. salt
1 t. baking soda
1 T. sugar
1 c. greek yogurt (The recipe said plain, not reduced fat works best but I say to play around with flavors! I used Oikos Vanilla Greek Yogurt 0% Fat* and loved it!)
Instructions:
1. Whisk together the eggs and vanilla in a small bowl, set aside.
2. In a medium mixing bowl, stir together the flour, salt, sugar, and baking soda.
3. Add the greek yogurt to the dry ingredients and stir until incorporated.
4. Gently whisk the egg mixture in just until well combined.
5. Preheat griddle to medium heat (about 300 degrees) and grease with butter or non-stick spray.
6. Pour batter by the 1/4 cup onto the griddle and cook until the top bubbles and the edges are golden brown. Gently flip and cook another couple minutes on the opposite sides until golden brown.
7. Serve hot with maple syrup and enjoy!
It originally said it served three, however I wound up with four really fat pancakes. I ate two (pictured below) and was absolutely stuffed.
According to MFP, homemade Greek yogurt pancakes have 177 calories for 2 pancakes although I hope to check this later today (I'll edit this when I do).
*The picky eater of the family loved them, but I was told they taste more like mini vanilla cakes than pancakes.
