Please post your favourite salad recipes! It is starting to get too hot to cook dinner!

    I love to do a chef salad for a meal!! fresh spinach then add in chopped boiled egg and lean ham and cheddar cheese, then thinly sliced radishes and cucumbers and red bell pepper!! any dressing will do but I love to get the shrimp sauce from Food Lion and use that!! YUMO!!!

    It's a great cold salad on a hot day.

    Oriental Cabbage Salad – original
    > Salad:
    > 1 pack (large) slaw mix
    > 6 green onions, chopped
    > 2 packages chicken flavored Ramen noodles
    > 1/2 cup almonds, slivered
    > 2 tablespoons sesame seeds
    > 3 tablespoons butter
    >
    > Brown noodles, almonds, sesame seeds in butter. Do noodles first for 2-5
    > minutes, then add other ingredients. Do not add to salad until noodles are cool and
    > salad is ready to eat (they get mushy).
    >
    > Dressing:
    > 2/3 cup vegetable oil
    > 2 tablespoons rice vinegar
    > 2 tablespoons soy sauce
    > 2 packs of Ramen chicken flavoring
    > 4 tablespoons sugar
    > 1 teaspoon pepper
    >
    > Combine sauce ingredients and marinade/chill overnight if possible.
    >
    > Mix cabbage and onions and chill overnight if possible.
    >
    > Mix all together just before serving.
    >
    > (note, I didn't chill overnight, more like 4 hours...)


    Our recipe modified: We changed the recipe (sesame seeds are expensive!) And we reduced the sugar and oil. It didn't change the taste much. So we do this one for us and the other for company.
    Salad:
    > 1 pack (large) slaw mix
    > 1 package chicken flavored Ramen noodles (toasted in sesame seed oil, 2 packages if I am feeling bad)
    > 2 tablespoons sesame seeds ( optional)

    Dressing:
    > 1/3 cup vegetable oil
    > 1/3 c rice vinegar
    > 1/3 c lite soy sauce
    > 1/3 c sugar
    > 1 packs of Ramen chicken flavoring (optional depending on how much salt we want)

    I don't have an actual recipe for this, but I used baby kale, roasted pistachios, and dried tart cherries with a sun-dried tomato vinaigrette, and that combination was marvelous. It was also good when I mixed the dressing with some plain yogurt to make it milder and creamy.

    Add apples! It gives it a crunchy zing :)
