Party Snack Ideas

I love, love, love football season because it means our fantasy football league starts...and fall weather! We have our fantasy football draft party this Saturday and while I am super pumped to pick the championship team and win some moolah, I know that I will be surrounded by all kinds of fattening foods and health UN-conscious folks. I plan on bringing/making some of my own healthy appetizers and snacks but I'm not sure what to make. Fruit and veggie trays are simple, but I love any opportunity to actually make a recipe of some sort. Any suggestions so that Saturday is not a disaster of an eating and binging day?

    here's a recipe that my friends who love junk food liked. It's like a mexican/taco dip but much healthier and filling too. You can dip baked corn chips or veggies like cucumer slices, celery,or wide slices of pepper

    1st layer, quacamole (avocado, lemon, garlic)
    2nd layer, salsa
    3rd layer black beans
    top it off with as many fresh chopped veggies as you like, I like tomato, onion, red and green peppers, but add whatever you like.

    Grilled shrimp and veggie skewers
    Stuffed mini tomatoes - you can stuff them with seasoned low-fat cream cheese

    I don't know what you normally make, but I would take something I like eating a party like this and changing it to a lower fat recipe - such as using turkey for meatballs. I don't know if you are grilling and shop at Costco - they have unbelievably good chicken sausages. They come in different flavors and if I remember correctly one has only 6 g. of fat!

    veggie skewers are a great, you could do fruit skewers too. and I just thought of another idea. you can make your own chips - thinly slice either white potatoes or sweet potatoes, season they however you like (salt & pepper, cajun spice, whatever) and bake them on a low heat until crispy - tasty and fat free

    Thank you everyone. Grilled shrimp is a great idea and I LOVE the stuffed tomato idea. What seasoning would I use with the cream cheese? I wonder if anyone else would notice if I used fat free cream cheese. I don't have a membership to Costco but the chicken sausages sound good. I know there will be bbq there. If I just manage my portion sizes right with the meat and munch on some healthy alternatives, I think I will be alright. Anyone else have suggestions? We host Sunday football parties all the time and I need to get prepared!

    hey girl :)

    you could do part-skim mozz with fresh sliced tomatoes and fresh basil ... i like to make little stacks then drizzle low-fat balsamic over them, or even olive oil... i like using the newmans lighten up roasted garlic vinagrette... not that bad for you if you limit it to a few stacks.. i'm totally with you though. sundays during football season are usually nacho days here!
