Hey any ideas or recipes I could use when it just to hot to cook inside and to hot to be outside for long?

    Gazpacho! It is a cold soup made out of tomatoes and other fresh veggies. There are a lot of recipes out there. I would just google "gazpacho recipe" and you will get a lot of options.

    Wraps with veggies and lunch meat and/or avacado. I add mustard sometimes too. Or salad with some avacado or canned beans.

    I just have simple clean foods. Tonight I had cherry tomatoes, celery, English cucumbers, tuna with light basalmic dressing, and Rainier cherries. Oh, and a carton of nonfat vanilla yogurt mixed with unsweetened cocoa powder. Totally delicious and satisfying in this heat.

    I steam some veggies in my fuzzy logic rice cooker and chill them, add them to salads and some rice.

    "Fagioli con tonno" -- beans and tuna salad. A can of beans, a can of tuna, some chopped celery, some Italian dressing.

    I set my crockpot outside on the patio table...plugged it in by the back door outlet...it doesn't heat up the house that way...(Bonus: makes the neighbors envious :bigsmile:)

    Other than that, I use a George Foreman Griller every day. It doesn't heat up the kitchen & its super quick.

    We grill about twice a week, and make enough meat to last for 2-3 days. We'll usually grill turkey sausages, turkey burgers, and/or chicken breasts. Then we'll usually serve with cold sides- a tomato/cucumber salad, broccoli slaw with apple cider vinegar & olive oil, regular salad, etc.

    ETA: We do also sometimes grill vegetables, like zucchini, yellow squash, onions, and tomatoes on skewers.

    Hell, you can make it with canned tuna.

    Shrimp cocktail (the soupy, Mexican style) is great on a hot day too.
