I guess because it is Monday and I'm having a Monday but I really want something
1. Low in calories 2. High in comfort 3. Easy to make for dinner tonight.
any suggestions?

Chicken Salad- with Grapes
This recipe makes 10 servings. I hope you enjoy! I was iffy about putting the grapes in but I heard that either grapes or apples in chicken salad is good! It wasn't too bad, I'm just not used to having fruit with my chicken
Ingredients-
2 1/2 cups cooked chicken breast shredded or cut up
1/2 cup fat free mayo
2 stalks celery
1/4 cup chopped onion
salt to taste
20 red grapes
Directions-
1. Boil chicken until done, then shred by hand or cut into cubes when cooled.
2. While chicken is cooking, chop celery, onion, and cut up grapes.
3. Put all ingredients in bowl and stir together.
Enjoy this on toast, bread, thins, crackers, etc. You could also put this on salad. I like it on crackers or thin bread.
Makes 10 1/3 cup servings.

The chicken salad recipe that coliemarieale posted above, is my husband's favorite. He wouldn't eat chicken salad and thought it was disgusting but I started putting grapes and even put nuts (pecans usually) in it from time to time and he can't get enough of it now.
It's definitely a comfort food for us. Our kids love it too and it's quick and easy to mix up especially if you live in a warm climate like we do, it's one of our go to meals for summer. Anytime I don't have to turn on the oven during summertime is a winner for me!0
