Super easy budget friendly low cal chili that cooks while your at the gym... and is insanely filling lol and cost about 6 dollars for the whole batch... Family didn't even know there wasn't meat in it This batch lasted our family 2 dinners (and were a family of 6!) so thats like 3 dollars per meal
Makes 12 servings about 150 calories each
1 bag of 14 bean "soup mix" (no seasonings)
1.5 cups tomatoe juice like v-8
1 can rotel tomatoes (don't drain)
1 can diced tomatoes (don't drain)
2 cans hunts tomatoe sauce (not speghetti sauce)
season with cumin, chili powder, garlic powder, and salt
add everything to a crock pot, cook on high for 3 hours, then low the rest of the day, if started in the morning will be done by dinner time
I served it over a cup of rice and added a 1/4 shredded cheddar cheese to the top So good!!
edit: almost forgot! make sure to presoak your beans the night before!

I haven't tried quinoa yet but I heard its a great alternative to rice I want to try it, not sure of the price though... I know we use rice a lot because its extremely budget friendly, and with a family of 6 food gets expensive lol0 -

BJs sells quinoa in a huge bag, pre rinsed, I don't remember how much it cost but I know it wasn't expensive. Trader Joe's also sells it pretty cheap, around $3.60 per bag (it goes a long way). I LOVE quinoa and there are so many ways to eat it.0

I might grab some at the store tonight when I do grocery shopping and try it0
