Cucumber & yogurt for breakfast/lunch

My latest favorite is Greek yogurt with thinly sliced English cucumber, a pinch of dried dill, and some Alessi Lemon Pepper (includes salt in it).
I run the cuke over a mandolin set very thin. The English cuke seems to keep better for days as I use 3 or 4 inches of it at a time and it's a milder flavor than the standard waxy US ones.

Cucumber salad, YUM!
I do mine with 1.5tbs of sourcream, 1tsp of vinigar, dill and S&P to taste. mix it all together and voila. cucumber heaven.0 -
Plain yogurt I assume? I think you are right about the English cucumber. I love cucumber and radish with alitte rice wine vinegar. Sometimes I use a dash of cayenne pepper.0

I love tzatziki so often make that - or just have a heap of cucumber with a big dollop of Greek yogurt with dried mint sprinkled on top. I had it tonight with tandoori chicken but love it with chilli or curry too. I'm incredibly greedy so having half a cucumber as a side dish satisfies my brain that I'm eating a lot!0 -

I have this sometimes and I am American, I prefer the English cucumber to whatever they call what we have with seeds.. I love cucumbers and tomatoes in either plain greek yogurt or cottage cheese for breakfast.
A second fave of mine is mixing into either the greek yogurt or cottage cheese about 1/2 cup of puree pumpkin with stevia and cinnamon (I add a few raisins too). Both are yummy for breakfast.0 -
