Tasty side dishes?

In my family we just have rice or mashed/baked potatoes, next to whatever protein I've cooked that day (usually chicken) but I'm thinking I should try something a little bit healthier. Any suggestions?

    red beets, steamed in the microwave.

    crazier side are the beet greens sauteed with onions and garlic in EEVO

    great side which are very healthy...

    Sautee some onions in olive oil then throw in some chopped winter squash, zucchini, and a bit of corn niblets for sweetness. Goes great with any meat.

    Any veggie (pretty much) roasted with olive oil and some garlic or other herb/spice mixture.

    Sweet potatoes with coconut oil.

    Homemade risotto

    Quinoa salads
    Buckwheat

    Served 2x this weekend,
    Finely shredded red cabbage, add sliced sugar snap peas in pods, dressing made from vinegar, Splenda or sugar and a little oil. Mix and marinate 2-24 hrs. Had with both chicken and fish and left overs on a burger. Spectacular colors

    Other side dish was 3 bean salad, made with cooked green and yellow and kidney beans. A little oil and balsamic vinegar to dress them up. Talk about colors!

    1. Mushrooms, grilled , sauteed or stew ( I love http://smittenkitchen.com/blog/2009/01/mushroom-bourguignon/ )
    2. Grilled veggies, brushed with olive oil and sprinkle with herbs and kosher salt ( peppers, zucchini, red onion etc)
    3. Green beans, cooked with tomatoes

    they've got a lot of cool steamable veggies and stir frys in frozen dept.
    I also love to do fresh veggies with lite ranch dip. you gotta keet things fun. all sorts of salads with neat toppings like strawberries and nuts keep you on the right path!

    roasted veggies are really easy to make and taste awesome. some combinations i like:

    roasted potato medallions with rosemary
    roasted broccoli with nuts and feta
    roasted squash and zucchini blend
    roasted spaghetti squash scraped out and mixed with garlic, salt, black pepper, and parmesan
    roasted potatoes, turnips, and carrots
    roasted cauliflower with garlic
  • These aren't SUPER healthy, however they are the regulars in my household and might give you some ideas:
    Baked Sweet Potatoes
    Fresh Sweet Corn
    Roasted Zucchini/Carrots
    Sautéed Bell Peppers/Onions
    Boiled Young Potatoes

    Also I absolutely LOVE frozen bags of mixed veggies (for example, cauliflower, broccoli and sliced carrots) as they are just ready to be boiled and enjoyed. Great for busy weeknights! Plus, they're just around $1 a bag.

  • Black Beans! We cook ours in the crock pot. Water, hot sauce, chili powder, cumin, onion powder (or small onion), garlic powder all in there with the beans and in 6 hrs we have a 77 calorie side dish!, If you have the calories some light sour cream and pico de gallo on top make this even more delicious. We also do pinto beans.
  • Also zucchini 'fires'. I slice the zucchini in the shape of fries, dredge in milk, and coat in a mixture of Parmesan and seasonings. Spray pan with a little Pam and bake at 350 for about 15 minutes, flip and cook for about 15 more minutes. Dip in a little ranch. I add a little hot sauce to the ranch for a kick!

    Lots of times I'll make frozen vegetables with something extra in them. Like fire roasted corn, or potatoes with a little low fat cheese melted on top

    Cauliflower fritters: steam cauliflower, chop, blend and mx with an egg, some cottage cheese, some onion, a tablespoon or two f bread crumbs. Chill, then form into patties. Spray oil and het in a non- stick pan. Fry on both sides. This tastes decadent but s actually quite healthy.
