Convenient Lunch Ideas

Hey everyone, I was wondering if anyone had some healthy ideas for lunch. I start summer school again Tuesday and I don't have much time in between my two classes to go home to prepare lunch. I also won't have access to a microwave, so that rules out some convenient lunches I usually take and make. Any ideas would be much appreciated

Make a sandwich in the morning and take it with you, add in some carrots or blueberries and a bottle of water, easy and cheap. I like a simple turkey sandwich on wheat with avocado, tomato and onion. Lots of flavor, no need for cheese, sometimes I throw a dab of mustard and mayo on it, other times I just like a little bit of balsamic vinegar and some pepper.

Turkey and Cheese Sandwhich! My absolute favorite packed lunch. Or Yogurt with granola and berries. Snacks could be wheat thins and hummus, green peppers, carrots, strawberries, 2 tbsp of PB
Lots of water and I always carry almonds with me! Try Emerald Nuts Cocoa Roast or Cinnamon Roast to switch it up.0 -
I have access to a microwave and fridge but am too lazy to use either. My packed lunch consists of 200g of microwaved frozen veg, with some protein. Protein could be leftovers, boiled egg, crab sticks, turkey cold cuts, beef jerky. Sometimes I add condiments to the frozen veg, such as a dollop of pesto, a dollop of chilli paste, or some sesame seeds.0

Do you eat pasta? There are so many cold pasta dishes -loaded with vegetables, and with or without chicken/meat. They keep very well in an insulated lunch bag. Recent ones have been asparagus/spinach/penne w/pine nuts and Chinese chicken noodle salad.
Sandwiches -I like veggie, especially when it's hot: lettuce, tomato, cucumber, avocado, red onion (I keep the tomato separate until it's time to eat, as it tends to make the bread soggy) - but just about anything will work.
I've never been a fan of cold soup, but I have a coworker who brings it most days. Strawberry, cantaloupe, gazpacho are what she brought last week.

Are you familiar with bento boxes? They are lunchbox with partitions & sections that snap together. I like to put a salad or leftovers from dinner in the bottom section of mine, and snacks like fruit, nuts, hardboiled eggs, etc in the top section. The sections & partitions help with portion control. And the boxes themselves just look cool. Form AND function.0

I love taking thin deli chicken breast on lo-cal wheat bread, lite yogurt, and fresh fruit. I take a package of string cheese to munch on about 3pm to get me thru the rest of the work day until 5pm0

I like to take a salad or some type of sandwich. Lately I've taken chicken salad sandwiches (made with light mayo, sunflower seeds, and dried cranberries) and egg salad sandwiches made with avocado instead of mayo. Other than that you could take some fruit, cut up veggies with hummus, nuts, cheese, boiled eggs, or tuna and crackers. If you don't like taking sandwiches, you could use wraps, flat bread, or pita bread for something a bit different. You could take a cold pasta or bean salad.0

My typical "cooler" lunch:
(four slices, wrapped in a plastic bag)
Plus an orange or a banana. I also carry my own utensils with me.
I tend to eat my salads at home, since that takes longer prep. This way I just take a couple of minutes to throw things into a bag. :-)0
