Pizza Quinoa Casserole

Hey guys! I'm sure lots of people have seen this recipe online already but if not here it is:

I'm a new vegetarian and I literally had quinoa for the first time for dinner tonight using this recipe and it was amazing! It's so filling with some veggies on the side and super easy. I didn't think I would like quinoa because it looks a little like couscous which I hate lol but this tastes really good :) Try it out!

P.S. I skipped the nutritional yeast, used a little cooking spray instead of olive oil and used Italian seasoning instead of individual servings of herbs

    I've never eaten quinoa. What kind of texture does it have? It looks like it might have a bit of 'snap' to it, like barley?

    I am really picky when it comes to texture and I think that plain quinoa would have a texture that resembles tiny bits of barley however in this recipe it is not bad at all. I'm sorry that I'm not much help, but I honestly ate this so quickly and enjoyed the flavour so much that I didn't even process the texture at all. :/ But honestly I think its worth a try, I felt like I was eating pasta regardless of the texture.

    FWIW, my 16yo dd who will not eat barley b/c of the texture likes quinoa. :smile: I'm going to have to give this recipe a try! TFS

    I like the texture of barley, and steel cut oats. If it has this type of 'snap', I know I'd like it.

    Will have to try it sometime soon :)
