Acorn Squash??

Hi all! I'm making acorn squash for a side tonight...but the old me would bake it and top it with butter and brown sugar...mmmmm.

Obviously, I can't really eat that while trying to lose weight :-P

What are some good toppings/ideas/healthy ways to dress up such a boring squash?

    Make a stuffing for it with rice or quinoa - the last time I made some, I did a wild rice/brown rice mix with some onion, celery and spices.

    I have made before where I cut in half, scoop out middle, make diagonal checkerboard in with knife, put 1/2 Tbsp butter, 1/2 tsp maple syrup, 1/2Tbsp brown sugar (have used splenda kind and real) then baked. I would also put different spices on like cinnamon or nutmeg....pumpkin pie spice is a nice blend that tastes delicious but no sugar. tastes like a real treat without all the calories of the way I used to make.
