Healthy/Easy Food ideas

Super busy mother of 2 looking to get back to a healthy lifestyle.

Trying to find some fairly simple lunch ideas/recipes for during the work week.
Something that won't take long to prepare the night before or morning of.
Low in calories.

Any ideas greatly appreciated!! :)

  • Salad in a jar! Old mason/food jars or plastic reuseables work great for this kind of thing. Add the wettest ingredients first. Dressing at the bottom, tomatos, cucumbers, onions on top. A protein. Top with spinach, dark green spring mix, kale. When you're ready to eat you can just shake vigorously and it's ready! I eat one every day for lunch. I love the Farmer Boy Lite greek dressing. Eat it on everything.

    Other than that, lunchboxes are always great. Veggies and fruit that are easy to snack on, easy to prepare the night before.

    And don't forget the awesome lunch vehicle: the sandwich. Get some good whole grain bread. I recommend Ezekial brand, usually found in the frozen breads. Lean protein!

    I love to make lots of healthy korean snacks for lunch..but those are a bit more complex :P
