Peach and Blueberry Cobbler under 170!

This recipe was posted with peaches by Valencia awhile back. Have her permission to repost with a few adjustments that brought calories lower. I could eat one of these a day right now with peaches so good in our neck of the woods!


1 diced peach
1/2 c blueberries
1 tsp cornstarch
cinnamon and/or nutmeg spices to taste

Cook this together in small skillet til simmers down. I added a bit of water.

In separate bowl mix 1 Tbl Bisquick lite and just enough water til thick yet pourable.

I transferred the fruit mixture into a ramakin that I sprayed with Pam and then poured the biquick on top. I baked in oven 8-10 mins at 350. The topping does not brown but becomes kind of hard.

Then take out of oven and add 2 Tbl Reddi whip to top!

Enjoy!

Valencia took hers straight from skillet to oven but I don't have a skillet to put in oven.

thickener 10 cal
blueberries 41 cal
redi whip 15 cal
biquick lite 35 cal
total 169 if my math is correct

    Bump! I'm going to substitute apple for peaches, 'cus I don't like 'em.

    What about peaches and raspberries or peaches and blackberries? I don't have any blueberries on hand :(

    We don't have bisquick here in Australia I believe and no ready whip. Wonder what I could use instead for little calories..

    Thinks sounds nice and could probably be done with many fruits, depending on cals, and was thinking what on earth is bisquick and also in Australia, thanks robdel for the answer.

    If you mean for a binder, egg whites would probably work. I use them to make oatmeal pancakes by running oat meal through a food processor. Mix with some egg whites, vanilla extract, and a little baking soda for fluffiness; pan fry or bake.

    Applesauce might also work since it tends to replace oil in many baking recipes.
